Try the bread made with 100% hot spring water!
The bakery uses natural yeast made from local fruit and hot spring water from the nearby Deyu hot spring. It is rare in Japan to use hot spring water instead of water. This is because it is very difficult to make bread with hot spring water, and even at this bakery, the dough did not rise at first and the smell was not good. After a lot of trial and error, they came up with a chewy, fluffy texture. The most popular 'Gozu Anpan' (702 yen including tax) has 5 kinds of sweet bean paste (finely mashed, semi crushed, Green bean, Chestnuts, Purple Sweet Potatoes) named after the nearby Gozu mountain range.
